Southwestern Casserole

An easy family dish that everyone will love.
                      
Southwestern Ground Beef Casserole.


2# ground beef
1 red pepper, small dice
1 small red onion, small dice
1 can corn, drained
1 can black beans, rinsed and drained
4 corn tortillas, cut into strips
1/4 cup cheddar or Mexican cheese
1 tsp cumin powder
1/2 tsp garlic powder
1/4 tsp dried sage
Salt/pepper
2 diced jalapenos (More for more heat)

In a skillet over med. heat, saute ground beef, onion and red and jalapeno peppers. Add cumin powder, garlic powder, sage and salt and pepper. Drain, add corn and black beans and mix.
Grease a casserole dish, pour mixture inside. Top with tortilla strips and cheese. Cover and bake 45 min. at 350 degrees.

Hint: Leave off tortilla strips and this dish becomes a great party dip.
